Ingredients

  • 2 cups Almond flour
  • 0.5 cup Coconut flour
  • 2 tablespoons Psyllium husk powder
  • 0.5 teaspoon Baking powder
  • 2 large Eggs
  • 0.25 cup Water
  • 0 for frying Ghee
  • 1 medium Cauliflower, cubed
  • 2 tablespoons Ghee
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Ginger, grated
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Garam masala
  • 2 tablespoons Fresh cilantro, chopped
  • 1 teaspoon Salt
  • 1 cup Water

Directions

Step 1

In a mixing bowl, combine almond flour, coconut flour, psyllium husk powder, baking powder, and salt.

Step 2

Add beaten eggs and water to the dry ingredients and knead until you get a firm, non-sticky dough. Cover the dough and let it rest for about 10 minutes.

Step 3

Divide the dough into small balls and roll each into a thin disc, about 4 inches in diameter.

Step 4

Heat ghee in a pan over medium heat. Fry each disc until golden brown on both sides. Remove and drain on paper towels.

Step 5

To make the potato curry, heat ghee in a pan. Add cumin seeds and let them splutter.

Step 6

Add the grated ginger and saute for 30 seconds.

Step 7

Add cauliflower cubes as a potato substitute, turmeric, red chili powder, coriander powder, garam masala, and salt. Cook for 5 minutes.

Step 8

Add 1 cup of water and cover the pan. Let it simmer for 15-20 minutes until the cauliflower is tender and the spices have blended well.

Step 9

Garnish with fresh cilantro and serve hot with the keto puris.
