Ingredients

  • 2 cups almond flour
  • 0.5 cup unsalted butter (softened)
  • 0.5 cup erythritol
  • 1 whole large egg
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup sugar-free chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the almond flour, erythritol, baking powder, and salt, and whisk until well combined.

In a separate bowl, using an electric mixer, cream the softened butter until smooth.

Add the egg and vanilla extract to the butter and continue to mix until fully incorporated.
