  • 1 cup Unsweetened shredded coconut
  • 0.5 cup Butter
  • 0.5 cup Erythritol sweetener
  • 0.25 cup Unsweetened almond butter
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Almond extract
  • 0.25 teaspoon Salt
  • 0.5 cup Dark chocolate (85% cocoa or higher)
  • 0.5 cup Chopped almonds

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal of the bars after baking.

Step 2

In a large mixing bowl, combine the almond flour, shredded coconut, and erythritol sweetener. Mix well to combine.

Step 3

In a small microwave-safe dish, melt the butter in the microwave. Once melted, add the unsweetened almond butter, vanilla extract, and almond extract. Stir until smooth and fully combined.

Pour the butter and almond butter mixture over the dry ingredients. Add the salt and stir until everything is well mixed and a dough forms.
