  • 1 large egg
  • 0.5 cup grated Parmesan cheese

  • 0.5 teaspoon dried oregano
  • 0.5 cup pizza sauce (sugar-free)
  • 0.5 cup sliced pepperoni
  • 0.5 cup green bell pepper, thinly sliced
  • 0.25 cup red onion, thinly sliced
  • 0.25 cup black olives, sliced

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Break the cauliflower into florets and pulse in a food processor until you achieve a rice-like consistency.

Transfer the riced cauliflower to a microwave-safe bowl. Microwave on high for 4-5 minutes, then let cool slightly.
