Ingredients

  • 1 lb Ground beef
  • 0.5 lb Ground pork
  • 1 large Egg
  • 0.25 cup Almond flour
  • 0.5 cup Fresh cilantro, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Ground cumin
  • 6 cups Beef broth
  • 2 tablespoons Tomato paste
  • 1 medium Zucchini, diced
  • 1 large Carrot, diced
  • 2 Celery stalks, diced
  • 1 medium Onion, diced
  • 1 Avocado, sliced
  • 1 Lime, sliced into wedges

Directions

Step 1

In a large bowl, combine ground beef, ground pork, egg, almond flour, half of the chopped cilantro, minced garlic, salt, black pepper, and ground cumin. Mix until well combined.

Step 2

Form the meat mixture into small meatballs, about 1 inch in diameter, and place them on a plate or baking sheet.

Step 3

In a large pot, bring beef broth to a simmer over medium-high heat. Add tomato paste and stir until it is fully dissolved.

Step 4

Carefully add the meatballs one by one into the simmering broth. Reduce heat to medium and let them cook for about 15 minutes.

Step 5

Add the diced zucchini, carrot, celery, and onion into the pot. Stir gently and continue to simmer for another 20 minutes, or until the vegetables are tender.

Step 6

Adjust seasoning if necessary by adding more salt or pepper to taste.

Step 7

Once cooked, serve the soup hot in bowls. Garnish with the remaining chopped cilantro.

Step 8

Serve with slices of avocado and lime wedges on the side for added flavor. Encourage guests to squeeze lime juice over their soup as desired.
