  • 1 medium head Cauliflower
  • 4 ounces Cream cheese
  • 1 tablespoon Rice vinegar
  • 4 sheets Nori sheets
  • 8 ounces Smoked salmon
  • 1 medium Cucumber
  • 1 large Avocado
  • None for serving Soy sauce (or tamari for gluten-free)
  • 1 for rolling Sushi mat

Directions

Step 1

Begin by preparing the cauliflower rice. Cut the cauliflower into small florets and process them in a food processor until they resemble rice grains.

Step 2

Transfer the cauliflower rice into a microwave-safe bowl and microwave on high for about 5-7 minutes until tender, then let it cool slightly.

Step 3

Once cooled, place the cauliflower rice in a clean cloth or cheesecloth and squeeze out as much moisture as possible.

Step 4

In a mixing bowl, combine the cauliflower rice, cream cheese, and rice vinegar. Mix until well combined and the mixture becomes sticky like sushi rice.

Peel the cucumber and slice into thin strips. Halve the avocado, remove the pit, and slice it into thin pieces as well.

Lay a nori sheet, shiny side down, on a sushi mat. Spread about 1/4 of the cauliflower rice mixture evenly over the nori, leaving a 1-inch strip at the top.

Arrange a few slices of smoked salmon, cucumber, and avocado in a horizontal line on the rice, about 1 inch from the bottom edge.

Step 8

Using the sushi mat, start rolling the nori tightly over the filling, pressing slightly to form a compact roll. Wet the strip at the top with a bit of water to seal the roll.

Repeat the process with the remaining ingredients to make a total of four rolls.

Using a sharp knife, slice each roll into 6-8 pieces, wiping the knife with a damp cloth between cuts to keep from sticking.
