  • 3 pieces Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 2 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 8 pieces Low-carb tortillas
  • 0.25 cup Fresh cilantro (chopped)
  • 0.5 cup White onion (diced)
  • 1 piece Avocado (sliced)

Directions

Step 1

Begin by rehydrating the guajillo and ancho chiles. In a small pot, bring water to a boil and add the chiles. Remove from heat and cover, allowing them to soak for about 10 minutes until softened.

Drain the chiles and place them in a blender along with the pineapple, white vinegar, lime juice, garlic, cumin, oregano, salt, and black pepper. Blend until smooth to create the marinade.
