  • 1 medium green bell pepper, sliced into strips
  • 1 medium zucchini, chopped

  • 1 cup chicken broth
  • 1 piece bay leaf
  • 0.5 teaspoon crushed red pepper flakes
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the minced garlic and chopped onion to the skillet and sauté until the onion becomes translucent, about 3 minutes.

Step 3

Add the red and green bell peppers and continue to cook for another 3 minutes until they begin to soften.

Step 4

Stir in the chopped zucchini and cook for an additional 2 minutes.
