Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 1 medium Onion (finely chopped)
  • 3 cloves Garlic (minced)
  • 0.5 cup Ketchup
  • 2 tablespoons Soy sauce
  • 1 tablespoon Brown sugar
  • 0.25 cup Water
  • 0.25 teaspoon Chili flakes (optional)
  • 2 tablespoons Fresh parsley (for garnish)

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

Heat the vegetable oil in a large skillet over medium-high heat. Once hot, sear the chicken thighs skin-side down for 4-5 minutes until golden and crispy. Flip and cook for another 3-4 minutes. Remove from the skillet and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the chopped onion. Sauté for 3-4 minutes until softened.

Step 4

Add the minced garlic and sauté for another 30 seconds until fragrant.

Step 5

Add ketchup, soy sauce, brown sugar, water, and chili flakes (if using) to the skillet. Stir to combine and bring to a simmer.

Step 6

Return the chicken thighs to the skillet, skin-side up, and spoon some of the sauce over the top. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the chicken is fully cooked and tender. The internal temperature of the chicken should reach 165°F (74°C).

Step 7

Uncover the skillet and continue to simmer for 5 minutes to allow the sauce to thicken slightly.

Step 8

Transfer the chicken to a serving plate, spoon the sauce over the top, and garnish with fresh parsley. Serve with rice, mashed potatoes, or a side of vegetables.
