Ingredients

  • 1 lb Ground Wagyu beef
  • 1 tsp Kosher salt
  • 0.5 tsp Freshly ground black pepper
  • 4 Brioche burger buns
  • 4 Cheddar cheese slices
  • 8 slices Thick-cut bacon
  • 1 large White onion
  • 2 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • 0.25 cup Mayonnaise
  • 0.25 cup Ketchup
  • 1 tbsp Dijon mustard
  • 4 slices Pickles
  • 4 Romaine lettuce leaves
  • 1 large Tomato

Directions

Step 1

Preheat a grill or stovetop grill pan to medium-high heat.

Step 2

Season the ground Wagyu beef with kosher salt and freshly ground black pepper. Form the meat into four evenly sized patties, about 1/2 inch thick.

Step 3

Slice the white onion thinly. In a skillet over medium heat, heat the olive oil and 1 tablespoon of butter. Add the onions and cook, stirring occasionally, until caramelized, about 10 minutes. Set aside.

Step 4

Cook the bacon in a separate skillet over medium heat until crispy, about 8 minutes. Drain on paper towels and set aside.

Step 5

Slice the tomato into four thick slices and wash and dry the romaine lettuce leaves. Set aside.

Step 6

In a small bowl, mix the mayonnaise, ketchup, and Dijon mustard to make a special burger sauce. Refrigerate until ready to use.

Step 7

Brush the brioche buns with the remaining 1 tablespoon of butter and toast them on the grill until golden, about 1-2 minutes.

Step 8

Grill the patties for about 3-4 minutes on each side, or until just cooked through (Wagyu beef is best served medium to medium-rare). During the last minute of cooking, place a slice of cheddar cheese on each patty and close the grill lid to let it melt.

Step 9

Assemble the burgers: Spread the special sauce on the bottom half of each bun. Layer with romaine lettuce, a slice of tomato, a cheese-topped patty, caramelized onions, two slices of crispy bacon, and a pickle slice. Add the top bun and press lightly to secure.

Step 10

Serve immediately with your favorite side dishes, such as fries or a green salad.
