  • 3 Bell peppers (assorted colors), sliced
  • 1 Yellow onion, sliced
  • 8 Corn tortillas (or flour tortillas)
  • 0.25 cup Cilantro, chopped
  • 1 Avocado, sliced
  • 0.5 cup Sour cream
  • 0.5 cup Shredded cheese (optional)
  • 1 Tomato, diced

Directions

Step 1

In a small bowl, whisk together olive oil, lime juice, soy sauce, minced garlic, ground cumin, paprika, salt, and black pepper to create the marinade.

Step 2

Place the flank steak in a large resealable plastic bag or shallow dish, and pour the marinade over the steak. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.
