Ingredients

  • 250 grams all-purpose flour
  • 200 grams granulated sugar
  • 150 grams unsalted butter
  • 2 large eggs
  • 200 grams sour cream
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 2 tablespoons powdered sugar (for dusting, optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a 9-inch round cake pan generously with butter or line it with parchment paper.

Step 2

In a medium-sized bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, cream the butter and sugar together using a hand or stand mixer until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs, one at a time, to the butter mixture, beating well after each addition. Then mix in the vanilla extract.

Step 5

Fold in the sour cream gently using a spatula until fully incorporated.

Step 6

Gradually add the dry ingredients to the wet mixture in batches, mixing just until the batter is smooth and lump-free. Be careful not to overmix.

Step 7

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 10

Once cooled, optionally dust the top with powdered sugar before serving. Slice and enjoy!
