Ingredients

  • 4 cups Canned pinto beans
  • 6 slices Thick-cut bacon
  • 1 medium, diced Yellow onion
  • 3 minced Garlic cloves
  • 0.25 cups Molasses
  • 0.5 cups Brown sugar
  • 1 cup Ketchup
  • 2 tablespoons Yellow mustard
  • 2 tablespoons Apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoons Chili powder
  • 0.25 teaspoons Ground black pepper
  • 0.5 teaspoons Salt
  • 0.5 cups Water

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large skillet, cook the thick-cut bacon over medium heat until crispy. Remove the bacon from the skillet, crumble it into small pieces, and set aside. Reserve about 2 tablespoons of bacon drippings in the skillet.

Step 3

In the same skillet with the bacon drippings, sauté the diced onion over medium heat until it becomes soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional 1 minute, stirring constantly to prevent burning.

Step 4

In a large mixing bowl, combine the sautéed onions and garlic with the pinto beans, crumbled bacon, molasses, brown sugar, ketchup, yellow mustard, apple cider vinegar, Worcestershire sauce, smoked paprika, chili powder, ground black pepper, and salt. Stir well to coat the beans evenly.

Step 5

Transfer the bean mixture into a large oven-safe baking dish, and pour in the water to ensure the beans have enough liquid to cook evenly.

Step 6

Cover the baking dish with aluminum foil and bake in the preheated oven for 60 minutes.

Step 7

Remove the foil and bake uncovered for an additional 30 minutes, allowing the top to caramelize and thicken.

Step 8

Remove the baked beans from the oven and let them cool for 10 minutes before serving.

Step 9

Serve warm as a side dish or enjoy on their own!
