Ingredients

  • 2 tablespoons Coconut oil
  • 1 inch Cinnamon stick
  • 4 pieces Cloves
  • 3 pieces Cardamom pods
  • 1 piece Star anise
  • 8 pieces Black peppercorns
  • 1 piece Bay leaf
  • 2 pieces Green chilies
  • 1 tablespoon Ginger
  • 1 medium, sliced thinly Onion
  • 1 medium, diced Carrot
  • 10 pieces, chopped Beans
  • 1 large, diced Potato
  • 1 cup Green peas
  • 1 cup Thick coconut milk
  • 2 cups Thin coconut milk
  • 1 teaspoon (or to taste) Salt
  • 10 leaves Curry leaves
  • 1 cup Water

Directions

Step 1

Heat coconut oil in a large, deep saucepan over medium heat.

Step 2

Add the whole spices: cinnamon stick, cloves, cardamom pods, star anise, black peppercorns, and bay leaf. Sauté for a minute until fragrant.

Step 3

Add the sliced green chilies, ginger, and curry leaves, and sauté for another minute.

Step 4

Add the sliced onions and sauté until they turn translucent.

Step 5

Add the diced carrots, beans, potatoes, and green peas. Stir well to coat the vegetables in the aromatic spice mixture.

Pour in the thin coconut milk and 1 cup of water, and season with salt.

Cover the pan and let the vegetables cook on a medium flame until they become tender, approximately 15-20 minutes.
