Ingredients

  • 4 pounds Chicken (assorted pieces: drumsticks, thighs, wings, etc.)
  • 2 cups Buttermilk
  • 3 cups All-purpose flour
  • 1 cup Cornstarch
  • 1 tablespoon Salt
  • 1 tablespoon Black pepper
  • 2 teaspoons Garlic powder
  • 2 teaspoons Onion powder
  • 2 teaspoons Paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Baking powder
  • 1 large Egg
  • 4 cups Vegetable oil (for frying)
  • 2 tablespoons Hot sauce (optional, for marinade)

Directions

Step 1

Place the chicken pieces in a large bowl or zip-top bag. Pour the buttermilk over the chicken, ensuring all pieces are submerged. Add hot sauce, if using, and stir to combine. Cover and refrigerate for at least 4 hours, or ideally overnight, to marinate.

Step 2

In a large mixing bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, onion powder, paprika, dried oregano, dried thyme, and baking powder. Mix thoroughly to create the seasoned coating.

Step 3

Remove the marinated chicken from the refrigerator. Crack the egg into the buttermilk marinade and whisk to combine.

Step 4

Working one piece at a time, dip each chicken piece into the seasoned flour mixture, pressing firmly to ensure a thick and even coating. Shake off any excess flour, then dip it back into the buttermilk mixture, and again into the flour mixture for a double coating. Place the coated chicken on a wire rack and allow it to rest for 10-15 minutes to set the coating.

Step 5

Heat the vegetable oil in a large, heavy-bottomed pot or deep fryer to 350°F (175°C). The oil should be deep enough to submerge the chicken completely.

Step 6

Carefully lower a few pieces of chicken into the hot oil, being careful not to overcrowd the pot. Fry the chicken for about 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F/74°C).

Step 7

Remove the fried chicken and place it on a wire rack set over a baking sheet to drain any excess oil. Repeat with the remaining chicken pieces.

Step 8

Serve the Kentucky Style Fried Chicken hot with your favorite sides, such as mashed potatoes, coleslaw, or biscuits, and enjoy!
