Ingredients

  • 1 head (medium) Green cabbage
  • 2 large Carrots
  • 1 Green bell pepper
  • 1 small Red onion
  • 0.5 cup Apple cider vinegar
  • 0.25 cup Granulated sugar
  • 2 tablespoons Yellow mustard
  • 1 teaspoon Celery seeds
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 cup Vegetable oil

Directions

Step 1

Remove the outer leaves of the green cabbage and slice it in half. Core the cabbage, then thinly slice it into shreds using a knife, mandoline, or food processor. Transfer to a large mixing bowl.

Step 2

Peel the carrots and grate them using a box grater or food processor. Add them to the bowl with the cabbage.

Step 3

Dice the green bell pepper and finely slice the red onion. Add both to the bowl with the cabbage and carrots, tossing to combine.

Step 4

In a small saucepan over medium heat, combine the apple cider vinegar, granulated sugar, yellow mustard, celery seeds, salt, and ground black pepper.

Step 5

Heat the mixture, stirring frequently, just until the sugar has dissolved, approximately 2–3 minutes. Remove from heat and whisk in the vegetable oil.

Step 6

Pour the warm dressing over the shredded vegetables in the bowl. Toss everything thoroughly to ensure the vegetables are evenly coated in the dressing.

Step 7

Cover the bowl with plastic wrap or a lid and refrigerate the coleslaw for at least 1 hour before serving. This allows the flavors to meld and the cabbage to soften slightly.

Step 8

Give the coleslaw a final toss before serving. Serve chilled as a side dish with your favorite Southern-style meals.
