Ingredients

  • 3 medium-sized Russet potatoes
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 8 ounces Breakfast sausage
  • 1 medium Yellow onion
  • 1 large Bell pepper (any color)
  • 2 cups Fresh spinach
  • 4 large Eggs
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Chopped parsley (optional, for garnish)

Directions

Step 1

Wash and peel the russet potatoes. Dice them into 1/2-inch cubes.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced potatoes and season with salt, pepper, garlic powder, and smoked paprika. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden and crispy. Remove the potatoes from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Crumble the sausage into the skillet and cook over medium heat until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.

Step 4

Dice the onion and bell pepper. Add them to the skillet and sauté for 3-4 minutes until softened. Add the fresh spinach and cook for an additional 1-2 minutes until wilted.

Step 5

Return the cooked potatoes and sausage to the skillet, stirring to combine with the vegetables. Spread the mixture evenly in the skillet.

Step 6

Create 4 small wells in the mixture and crack an egg into each well. Reduce the heat to low, cover the skillet with a lid, and cook for 5-8 minutes or until the egg whites are set but the yolks are still runny. If you prefer firmer yolks, cook for an additional 2-3 minutes.

Step 7

Sprinkle the shredded cheddar cheese over the mixture and let it melt for 1-2 minutes.

Step 8

Remove the skillet from heat and garnish with chopped parsley, if desired. Serve immediately and enjoy!
