  • 2 stalks Celery stalks, diced

  • 1 teaspoon Smoked paprika
  • 0.5 teaspoons Ground coriander
  • 0.5 teaspoons Dried oregano
  • 4 cups Black beans, rinsed and drained
  • 4 cups Vegetable broth
  • 1 leaf Bay leaf
  • 2 tablespoons Dry sherry
  • 2 tablespoons Fresh lime juice
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional garnish)

Directions

Step 1

Heat the olive oil in a large soup pot over medium heat.

Step 2

Add the diced onion and sauté for 5 minutes or until translucent.

Step 3

Stir in the minced garlic, diced carrot, and diced celery. Cook for an additional 5 minutes until the vegetables begin to soften.

Step 4

Sprinkle in the ground cumin, smoked paprika, ground coriander, and dried oregano. Toast the spices for 1 minute while stirring to enhance their aroma.
