Peel and pit the fresh lychees, reserving all of the fruit. If using canned lychees, drain and reserve the syrup for later use.
In a small saucepan, combine the grated ginger, granulated sugar, and water. Bring the mixture to a gentle boil over medium heat, stirring until the sugar dissolves completely to create a ginger syrup.
Reduce the heat and let the ginger syrup simmer for another 5 minutes. Remove from heat, strain the syrup to remove ginger pieces, and allow it to cool to room temperature.
