Ingredients

  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 6 large Yellow onions, thinly sliced
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 3 cloves Garlic, minced
  • 0.5 cup Dry white wine
  • 6 cups Beef broth
  • 2 leaves Bay leaves
  • 4 Fresh thyme sprigs
  • 1 Baguette, sliced and toasted
  • 2 cups Gruyère cheese, shredded
  • 0.5 teaspoon Black pepper

Directions

Step 1

In a large, heavy-bottomed pot, melt the butter and olive oil over medium heat.

Step 2

Add the thinly sliced onions, sugar, and salt to the pot. Stir to coat the onions in the butter and oil mixture.

Step 3

Cook the onions slowly, stirring frequently, for 30-40 minutes, until they are a deep golden brown and caramelized.

Step 4

Add the minced garlic and cook for 1-2 minutes, until fragrant.

Step 5

Deglaze the pot by adding the dry white wine, scraping up any browned bits from the bottom of the pot. Let the wine reduce for 2-3 minutes.

Step 6

Pour in the beef broth and add the bay leaves and thyme sprigs. Bring the soup to a boil, then reduce the heat to low and simmer for 20 minutes.

Step 7

Discard the bay leaves and thyme sprigs. Season the soup with black pepper to taste.

Step 8

Preheat the broiler. Ladle the soup into oven-safe bowls and place a slice or two of toasted baguette on top of each bowl.

Step 9

Sprinkle a generous handful of shredded Gruyère cheese over the bread.

Step 10

Place the bowls on a baking sheet and broil for 3-5 minutes, or until the cheese is melted, bubbly, and golden brown.

Step 11

Carefully remove the bowls from the broiler. Let them cool for a few minutes before serving the soup hot.
