Ingredients

  • 2 pounds beef chuck, cubed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 medium carrots, sliced
  • 2 medium celery stalks, chopped
  • 3 garlic cloves, minced
  • 3 medium potatoes, cubed
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon thyme, dried
  • 1 cup frozen peas
  • 2 tablespoons parsley, chopped (optional, for garnish)

Directions

Step 1

Season the beef cubes with salt and black pepper.

Step 2

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes in batches and sear until browned on all sides. Remove the beef and set it aside.

Step 3

In the same pot, add the diced onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables soften slightly.

Step 4

Add the minced garlic and cook for 1 minute until fragrant.

Step 5

Stir in the tomato paste and cook for another 1-2 minutes to deepen its flavor.

Step 6

Return the seared beef to the pot and pour in the beef broth. Add the bay leaves and dried thyme. Bring the mixture to a boil.

Step 7

Reduce the heat to low, cover the pot, and let the stew simmer for 1 hour, stirring occasionally.

Step 8

After 1 hour, add the cubed potatoes to the pot. Cover and continue simmering for an additional 30 minutes or until the potatoes are tender.

Step 9

Stir in the frozen peas during the last 10 minutes of cooking.

Step 10

Taste the stew and adjust seasoning with additional salt and pepper if needed.

Step 11

Remove the bay leaves before serving. Ladle the stew into bowls and garnish with chopped parsley, if desired.
