  • 4 cups beef broth
  • 1 14.5-ounce can fire-roasted diced tomatoes, with juices
  • 1 15-ounce can black beans, rinsed and drained
  • 1 15-ounce can pinto beans, rinsed and drained
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 2 medium russet potatoes, peeled and diced
  • 2 tablespoons lime juice
  • 2 tablespoons fresh cilantro, chopped (optional garnish)

Directions

Step 1

Season the beef stew meat with salt and black pepper.

Step 2

In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat. Sear the beef in batches, browning all sides. Remove the beef and set it aside on a plate.
