Ingredients

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 300 grams button mushrooms or cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 60 milliliters dry white wine
  • 250 milliliters chicken or vegetable stock
  • 120 milliliters heavy cream
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Directions

Step 1

In a large skillet, heat the butter and olive oil over medium heat until the butter is melted and foamy.

Step 2

Add the sliced mushrooms to the skillet and sauté for 8-10 minutes, stirring occasionally, until the mushrooms are golden brown and their moisture has mostly evaporated.

Step 3

Stir in the minced garlic and cook for another 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 4

Sprinkle the all-purpose flour over the mushroom mixture and stir well to evenly coat the mushrooms. Cook for 1-2 minutes to eliminate the raw taste of the flour.

Step 5

Slowly pour in the white wine while stirring constantly to deglaze the pan. Let the wine simmer for 2-3 minutes until reduced by half.

Step 6

Gradually add the chicken or vegetable stock, continuing to stir to ensure a smooth consistency. Bring the mixture to a gentle simmer.

Step 7

Reduce the heat to low and stir in the heavy cream, thyme leaves, salt, and black pepper. Simmer the sauce for 5-7 minutes, stirring occasionally, until it thickens to your desired consistency.

Step 8

Taste and adjust the seasoning with additional salt and pepper if needed.

Step 9

Remove the skillet from heat and garnish the sauce with fresh parsley if desired.

Step 10

Serve the mushroom sauce warm over steak, chicken, pasta, or vegetables.
