Ingredients

  • 2 cups elbow macaroni (or any short pasta)
  • 1 pound ground beef (or your choice of protein)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 medium bell pepper, diced (any color)
  • 2 medium carrots, diced
  • 1 medium zucchini, diced
  • 14.5 ounces canned diced tomatoes (with juices)
  • 8 ounces tomato sauce
  • 2 cups beef or vegetable broth
  • 2 teaspoons soy sauce
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon paprika
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1 cup shredded cheddar cheese (optional, for serving)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Cook the elbow macaroni in a pot of salted boiling water according to the package instructions until al dente. Drain and set aside.

Step 2

In a large, deep skillet or Dutch oven, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon. If necessary, drain any excess fat.

Step 3

Add the diced onion and minced garlic to the skillet. Sauté for 2–3 minutes until the onion softens and becomes translucent.

Step 4

Stir in the diced bell pepper, carrots, and zucchini. Cook for 5 minutes, stirring occasionally, until the vegetables are slightly softened.

Step 5

Add the canned diced tomatoes (with their juices), tomato sauce, beef or vegetable broth, soy sauce, Italian seasoning, paprika, salt, and black pepper. Stir well to combine.

Step 6

Bring the mixture to a gentle boil, then reduce the heat to low. Simmer uncovered for 10 minutes, allowing the flavors to meld and the sauce to thicken.

Step 7

Stir in the cooked pasta and mix well until evenly coated. Let the goulash cook for an additional 5 minutes to heat through.

Step 8

Taste and adjust the seasonings as needed. If desired, top with shredded cheddar cheese and freshly chopped parsley before serving.

Step 9

Serve the goulash warm in bowls and enjoy!
