Ingredients

  • 6 medium Fresh peaches
  • 1 cup Granulated sugar
  • 1 4 cup Brown sugar
  • 1 tablespoon Fresh lemon juice
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 4 teaspoon Salt
  • 8 tablespoons Unsalted butter
  • 1 cup Whole milk
  • 1 teaspoon Cinnamon
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and slice the fresh peaches into wedges. Discard the pits. Place the peach slices in a medium-sized mixing bowl.

Step 3

Add 1/4 cup of granulated sugar, the brown sugar, and lemon juice to the peaches. Gently toss to combine, then set aside to macerate for about 10 minutes.

Step 4

Meanwhile, melt 8 tablespoons of unsalted butter in a 9x13-inch baking dish by placing it in the preheating oven. Once melted, remove the dish from the oven and set it aside.

Step 5

In a separate larger mixing bowl, whisk together the flour, remaining 3/4 cup granulated sugar, baking powder, and salt.

Step 6

Slowly pour in the milk and vanilla extract, whisking until the batter is smooth and lump-free.

Step 7

Pour the batter evenly over the melted butter in the baking dish, but do not stir—let the batter float on top of the butter.

Step 8

Evenly spoon the prepared peaches and their juices over the batter. Do not stir or mix.

Step 9

Sprinkle the cinnamon evenly on top of the peaches for added flavor.

Step 10

Bake the cobbler in the preheated oven for 40-45 minutes, or until the top is golden brown and the batter has risen around the peaches.

Step 11

Remove from the oven and let cool slightly before serving.

Step 12

Serve warm, optionally topped with a scoop of vanilla ice cream or a dollop of whipped cream.
