Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 0.5 cups all-purpose flour
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces baby Bella or Cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 0.75 cups dry Marsala wine
  • 0.75 cups chicken broth
  • 0.25 cups heavy cream
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Place each chicken breast between two sheets of plastic wrap or parchment paper and pound to an even thickness, about 1/2 inch thick.

Step 2

In a shallow bowl, combine the flour, salt, black pepper, and garlic powder. Dredge each chicken breast in the flour mixture, shaking off the excess, and set aside.

Step 3

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and fully cooked. Remove the chicken from the skillet and set aside.

Step 4

Reduce the heat to medium. Add the remaining 1 tablespoon of butter to the skillet, followed by the sliced mushrooms. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are browned and their liquid has evaporated.

Step 5

Add the minced garlic to the skillet and cook for 30 seconds, stirring frequently, until fragrant.

Step 6

Deglaze the skillet with the Marsala wine, scraping up any browned bits from the bottom of the pan. Let the wine simmer for 2-3 minutes to reduce slightly.

Step 7

Stir in the chicken broth and heavy cream. Simmer for an additional 5 minutes, or until the sauce thickens slightly.

Step 8

Return the chicken breasts to the skillet, spooning the sauce over them. Let them heat through for 2-3 minutes.

Step 9

Garnish with fresh parsley, if desired, and serve warm. Chicken Marsala pairs well with mashed potatoes, pasta, or sautéed vegetables.
