Ingredients

  • 12 oz Fettuccini pasta
  • 2 large Chicken breast
  • 2 tbsp Olive oil
  • 4 tbsp Unsalted butter
  • 4 cloves Garlic
  • 2 cups Heavy cream
  • 1 cup Parmesan cheese
  • 0.5 tsp Red chili flakes
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp Fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccini pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta cooking water.

Step 2

While the pasta cooks, prepare the chicken. Season both sides of the chicken breasts with 1/2 tsp of salt and 1/4 tsp of ground black pepper.

Step 3

Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side, or until golden brown and fully cooked to an internal temperature of 165°F (74°C). Remove the chicken from the skillet and let it rest for 5 minutes before slicing into thin strips.

In the same skillet, reduce the heat to medium and melt 4 tbsp of unsalted butter. Add the minced garlic and sauté for 1-2 minutes until fragrant, taking care not to burn.
