  • 3 medium Bell peppers (red, green, yellow)
  • 1 large Onion
  • 8 medium Tortillas
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh cilantro
  • 1 cup Shredded cheese
  • 0.5 cup Sour cream (optional)
  • 0.5 cup Guacamole (optional)

Directions

Step 1

Slice the chicken breasts into thin strips and place them in a medium-sized bowl.

Step 2

In a small bowl, whisk together lime juice, olive oil, soy sauce, garlic powder, ground cumin, chili powder, and smoked paprika. Pour this marinade over the chicken, tossing to coat evenly. Cover and refrigerate for at least 15 minutes or up to 4 hours for more flavor.

While the chicken is marinating, slice the bell peppers and onion into thin strips.
