Ingredients

  • 3 pounds pork shoulder roast
  • 1 large yellow onion
  • 4 whole garlic cloves
  • 2 cups baby carrots
  • 4 medium red potatoes
  • 2 cups chicken broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Prep the vegetables: slice the yellow onion into thick rings, peel and smash the garlic cloves, and dice the red potatoes into quarters.

Step 2

Heat the olive oil in a large skillet over medium-high heat.

Step 3

Season the pork shoulder roast evenly with kosher salt, ground black pepper, and paprika.

Step 4

Sear the pork shoulder on all sides in the skillet until golden brown, approximately 2-3 minutes per side. Remove from heat.

Step 5

Layer the bottom of the crock pot with the onion rings, followed by the smashed garlic, baby carrots, and quartered potatoes.

Step 6

Place the seared pork shoulder roast on top of the vegetables.

Step 7

In a medium mixing bowl, whisk together the chicken broth, Worcestershire sauce, soy sauce, and dried thyme.

Step 8

Pour the liquid mixture over the pork roast and vegetables in the crock pot.

Step 9

Cover and cook on low for 8 hours (or on high for 4-5 hours) until the pork is tender and easily pulls apart with a fork.

Step 10

Once done, remove the pork roast from the crock pot. Allow it to rest on a cutting board for 5 minutes before slicing or shredding.

Step 11

Serve the pork roast with the vegetables and a generous drizzle of the flavorful juices from the crock pot.
