Ingredients

  • 2 pounds beef chuck roast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.25 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 4 medium carrots, peeled and cut into chunks
  • 4 medium potatoes, peeled and cut into chunks
  • 3 stalks celery stalks, sliced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 leaf bay leaf
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Cut the beef chuck roast into 1.5-inch cubes. Pat dry with paper towels and season generously with salt and black pepper.

Step 2

Place the all-purpose flour in a shallow bowl. Dredge the beef cubes in the flour, shaking off excess.

Step 3

In a large Dutch oven or heavy-bottomed pot, heat 2 tablespoons of olive oil over medium-high heat. Working in batches, sear the beef on all sides until browned. Remove the browned beef and set it aside.

Step 4

Lower the heat to medium and add the diced onion to the pot. Sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute, stirring constantly.

Step 5

Return the beef to the pot. Add the carrots, potatoes, and celery, stirring to combine.

Step 6

Pour in the beef broth, ensuring the beef and vegetables are fully submerged. Stir in the tomato paste and Worcestershire sauce.

Step 7

Add the dried thyme, dried rosemary, and bay leaf to the pot. Bring the stew to a simmer.

Step 8

Reduce the heat to low. Cover the pot with a lid and let the stew simmer for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the vegetables are cooked through.

Step 9

Remove and discard the bay leaf. Stir in the frozen peas and let them cook for 5 minutes.

Step 10

Taste the stew and adjust the seasoning with additional salt and pepper, if needed.

Step 11

Garnish with fresh parsley before serving. Serve hot with crusty bread or over rice, if desired.
