Ingredients

  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter (cold, cubed)
  • 1 tablespoon granulated sugar
  • 0.5 teaspoon salt
  • 6 tablespoons ice water
  • 2 cups fresh rhubarb (diced into 1/2-inch pieces)
  • 2 cups fresh strawberries (hulled and quartered)
  • 2 medium apples (peeled, cored, and thinly sliced)
  • 1 cup granulated sugar
  • 0.25 cup brown sugar (packed)
  • 3 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 tablespoon water
  • 2 tablespoons coarse sugar (for sprinkling)

Directions

Step 1

In a large mixing bowl, combine flour, granulated sugar, and salt. Add cold cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse sand.

Step 2

Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 3

Preheat your oven to 375°F (190°C).

Step 4

In a large mixing bowl, combine the diced rhubarb, quartered strawberries, sliced apples, granulated sugar, brown sugar, cornstarch, cinnamon, and vanilla extract. Stir gently until the fruit is evenly coated.

Step 5

Roll out one of the dough discs on a lightly floured surface to fit a 9-inch pie dish. Transfer the rolled-out dough to the pie dish, letting excess dough hang over the edges.

Step 6

Pour the fruit filling into the prepared crust, spreading it out evenly.

Step 7

Roll out the second dough disc and place it over the top of the pie. Trim excess dough, leaving about 1/2 inch overhang. Fold the edges under and crimp to seal.

Step 8

Cut a few slits or small shapes in the top crust to allow steam to escape.

Step 9

In a small bowl, whisk together the egg and water to create an egg wash. Brush the egg wash over the top crust and sprinkle with coarse sugar.

Step 10

Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 50-60 minutes, or until the crust is golden brown and the filling is bubbling.

Step 11

Allow the pie to cool completely on a wire rack before serving to allow the filling to set.
