Ingredients

  • 1.5 cups Kellogg's All-Bran Buds cereal
  • 1.25 cups Milk
  • 1 cup All-purpose flour
  • 0.5 cup Whole wheat flour
  • 0.5 cup Brown sugar, packed
  • 1 tablespoon Baking powder
  • 1 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 2 large Eggs
  • 0.25 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins (optional)

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a large bowl, combine the Kellogg's All-Bran Buds cereal and milk. Stir and let it sit for 5 minutes to soften.

Step 3

In another bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, and salt.

Step 4

To the softened cereal and milk mixture, add the eggs, vegetable oil, and vanilla extract. Whisk until well combined.

Step 5

Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.

Step 6

If using raisins, gently fold them into the batter.

Step 7

Scoop the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Step 10

Serve warm or store in an airtight container for up to 3 days.
