Ingredients

  • 12 ounces Fresh cranberries
  • 1 cup Granulated sugar
  • 1 large Apple
  • 1 large Orange
  • 8 ounces Crushed pineapple (with juice)
  • 3 ounces Lemon-flavored gelatin
  • 1 cup Boiling water
  • 1 cup Cold water
  • 0.5 cup Chopped pecans or walnuts (optional)

Directions

Step 1

Rinse the cranberries and pat them dry. Use a food processor to coarsely chop the cranberries, or finely chop them by hand.

Step 2

In a mixing bowl, combine the chopped cranberries with granulated sugar. Stir well and allow the mixture to sit for 10 minutes to let the cranberries macerate.

Step 3

Peel and core the apple before finely dicing it into small pieces. Set aside.

Step 4

Peel the orange and remove any seeds. Chop the orange into small pieces, ensuring to capture any juice during the process.

Step 5

In a heatproof bowl, dissolve the lemon-flavored gelatin in boiling water. Stir thoroughly until the gelatin is completely dissolved, about 2 minutes.

Step 6

Add the cold water to the gelatin mixture and stir to combine.

Step 7

Stir the macerated cranberries (including the juice), diced apple, chopped orange (with juice), and crushed pineapple (with juice) into the gelatin mixture.

Step 8

If using, fold in the chopped pecans or walnuts for added crunch.

Step 9

Pour the mixture into a serving dish or mold. Cover and refrigerate for at least 4 hours or until the gelatin is fully set and the salad is firm.

Step 10

Serve chilled as a refreshing side dish or dessert for your holiday table.
