Ingredients

  • 250 g Shiitake mushrooms
  • 3 tbsp Olive oil
  • 2 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 tsp Sesame oil
  • 2 Garlic cloves, minced
  • 150 g Fresh mixed salad greens
  • 2 tbsp Sliced almonds
  • 2 Green onion, thinly sliced
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Clean the shiitake mushrooms by gently wiping them with a damp paper towel. Remove the stems and slice the caps into thin strips.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Step 3

Add the shiitake mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until they are tender and slightly golden brown.

Step 4

In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, remaining 1 tablespoon of olive oil, salt, and black pepper to make the dressing.

Step 5

Reduce the heat to low and pour the dressing over the cooked mushrooms in the skillet. Toss to evenly coat the mushrooms and warm the dressing slightly, about 1-2 minutes.

Step 6

In a large mixing bowl, combine the fresh salad greens, sliced almonds, and green onion.

Step 7

Pour the warm mushroom mixture over the salad and gently toss everything together until evenly mixed.

Step 8

Serve immediately, dividing the salad among plates. Enjoy the warm, earthy flavors of this satisfying dish!
