Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground lamb or beef
  • 1 medium yellow onion, finely diced
  • 2 medium carrots, finely diced
  • 2 celery stalks, finely diced
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1.5 tablespoons Worcestershire sauce
  • 1 cup beef or chicken stock
  • 1 cup frozen peas
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 pounds russet potatoes, peeled and halved
  • 4 tablespoons butter
  • 0.5 cup heavy cream
  • 0.5 cup grated cheddar cheese (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Heat the olive oil in a large skillet over medium heat. Add the ground lamb or beef and cook until fully browned, breaking it up with a wooden spoon.

Step 3

Drain excess fat, if necessary, and stir in the diced onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are soft.

Step 4

Add the garlic, tomato paste, Worcestershire sauce, rosemary, and thyme. Mix well and cook for 1-2 minutes until fragrant.

Step 5

Pour in the beef or chicken stock and bring the mixture to a simmer. Cook for 10-15 minutes, stirring occasionally, until the liquid reduces and thickens slightly. Stir in the peas, salt, and black pepper.

Step 6

While the meat mixture simmers, boil the potatoes in a large pot of salted water for 15-20 minutes, or until tender when pierced with a fork.

Step 7

Drain the potatoes and mash them using a potato masher or ricer. Mix in the butter, heavy cream, and a pinch of salt until smooth and creamy.

Step 8

Transfer the meat mixture to a baking dish and spread it out evenly. Top with the mashed potatoes, spreading them smooth or leaving a textured pattern with the back of a spoon.

Step 9

If desired, sprinkle grated cheddar cheese on top for an extra layer of flavor.

Step 10

Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top is golden brown and the edges are bubbling.

Step 11

Remove from the oven and let the Shepherd's Pie rest for 5-10 minutes before serving.
