Ingredients

  • 250 grams all-purpose flour
  • 10 grams baking powder
  • 1 pinch salt
  • 200 grams unsalted butter
  • 200 grams granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 120 milliliters milk
  • 1 teaspoon lemon zest

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 9-inch round cake pan or loaf pan. Line the bottom with parchment paper for easier removal.

Step 2

In a medium bowl, sift together the all-purpose flour, baking powder, and salt. Mix and set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream the butter and sugar together until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs, one at a time, to the butter mixture, beating well after each addition. Stir in the vanilla extract and lemon zest.

Step 5

Gradually add the dry ingredients to the wet ingredients in thirds, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined; do not overmix.

Step 6

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 7

Bake the cake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then transfer it onto a wire rack to cool completely.

Step 9

Once cooled, the cake is ready to serve. Optionally, dust with powdered sugar or serve with a dollop of whipped cream on the side.
