Ingredients

  • 4 cups pumpkin puree
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 1 teaspoons salt
  • 0.5 teaspoons ground black pepper
  • 1 teaspoons sugar (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)
  • 2 tablespoons pumpkin seeds, toasted (for garnish)

Directions

Step 1

In a large soup pot, melt the butter over medium heat.

Step 2

Add the diced onion and cook until translucent, about 5 minutes, stirring occasionally.

Step 3

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 4

Add the pumpkin puree and vegetable broth, stirring until well combined.

Step 5

Bring the mixture to a simmer. Reduce the heat to low and let it cook for 15 minutes, stirring occasionally.

Step 6

Using an immersion blender (or a regular blender in batches), puree the soup until smooth and velvety. If using a regular blender, return the soup to the pot after blending.

Step 7

Stir in the heavy cream, ground cinnamon, ground nutmeg, salt, and black pepper. Taste and adjust seasoning as needed. Add the sugar if you prefer a sweeter soup.

Step 8

Heat the soup gently for another 5 minutes, without letting it boil.

Step 9

Ladle the soup into bowls and garnish with fresh parsley and toasted pumpkin seeds.

Step 10

Serve warm and enjoy your delicious Keck's Pumpkin Soup!
