Ingredients

  • 500 grams Lamb (boneless, chopped into bite-sized pieces)
  • 2 medium Onion (finely chopped)
  • 3 large Tomatoes (pureed)
  • 1 tablespoon Ginger paste
  • 1 tablespoon Garlic paste
  • 100 grams Yogurt (plain, whisked)
  • 3 tablespoons Oil (vegetable or mustard)
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1.5 teaspoons Coriander powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • 0.25 teaspoon Ground cinnamon
  • 2 pods Green cardamom pods (crushed)
  • 2 Bay leaves
  • 2 tablespoons Fresh cilantro (for garnish, chopped)
  • 250 ml Water
  • 1.5 teaspoons Salt

Directions

Step 1

Heat the oil in a large, deep pan over medium heat. Add cumin seeds, bay leaves, and crushed cardamom pods to the hot oil and sauté for 30 seconds, until aromatic.

Step 2

Add the chopped onions and cook until golden brown, about 8-10 minutes.

Step 3

Stir in the ginger and garlic paste, cooking for another 2 minutes until the raw smell disappears.

Step 4

Add the turmeric powder, coriander powder, and red chili powder. Cook the spices for 1 minute, stirring frequently to avoid burning.

Step 5

Add the pureed tomatoes and cook for 10 minutes, until the oil begins to separate from the mixture.

Step 6

Add the lamb pieces and stir well to coat the meat with the masala. Cook for 5 minutes, allowing the meat to sear slightly.

Step 7

Lower the heat and stir in the whisked yogurt, ensuring it blends smoothly into the curry.

Step 8

Pour in the water and add salt. Mix well, then cover the pan and let the curry simmer on low heat for 40 minutes, or until the lamb is tender. Stir occasionally and adjust water if the gravy becomes too thick.

Step 9

Stir in the garam masala and ground cinnamon. Cook for another 5 minutes.

Step 10

Turn off the heat, garnish with chopped cilantro, and serve hot with naan, roti, or steamed rice.
