Rinse the short-grain rice thoroughly under cold water until the water runs clear. Drain and set aside for 10 minutes.
If using dried shiitake mushrooms, rehydrate them in warm water for 20 minutes. Once softened, slice thinly.
Prepare the vegetables: julienne the carrot, thinly slice the shiitake mushrooms, dice the konnyaku into small cubes, and slice the aburaage into thin strips.
In a small bowl, mix dashi stock powder (or liquid), soy sauce, mirin, and sake to create the seasoning sauce.
Place the rinsed rice into a rice cooker or a heavy-bottomed pot. Add the water and the prepared seasoning sauce. Stir to combine.
Spread the carrot, shiitake mushrooms, konnyaku, and aburaage evenly over the top of the rice. Do not mix them into the rice at this stage.
If using a rice cooker, start the rice cooker and let it cook until completed. If using a pot, cover with a lid, bring to a boil over medium heat, then reduce to low heat and simmer for 15 minutes. Turn off the heat and let it rest with the lid on for another 10 minutes.
Once the cooking is complete, gently fluff the rice and mix the vegetables evenly into the rice using a rice paddle or spatula.
Serve the Kayaku Gohan warm, optionally garnished with finely chopped green onions.
