Ingredients

  • 250 g All-purpose flour
  • 125 g Unsalted butter
  • 60 ml Cold water
  • 1 tsp Salt
  • 200 g Kaya (coconut jam)
  • 1 large Egg yolk
  • 1 tbsp Milk

Directions

Step 1

In a large mixing bowl, sift the all-purpose flour and salt together.

Step 2

Cut the unsalted butter into small cubes and add to the flour mixture. Use your fingers or a pastry cutter to rub the butter into the flour until it resembles coarse breadcrumbs.

Step 3

Gradually add cold water into the flour mixture and mix until the dough comes together. Be careful not to overwork the dough.

Step 4

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.

Once the dough is chilled, roll it out on a lightly floured surface to about 3mm thickness.

Use a round cutter (about 8cm in diameter) to cut out circles from the dough.

Place a tablespoon of kaya in the center of each dough circle.

In a small bowl, mix the egg yolk and milk together to make an egg wash.

Brush the tops of each kaya puff with the egg wash to give a golden finish.

Bake in the preheated oven for 18-20 minutes, or until the puffs are golden brown.
