Ingredients

  • 1.5 lbs chicken breast
  • 3 tablespoons soy sauce
  • 1.5 cups cornstarch
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1.25 cups water
  • 1 large egg
  • 2 cups vegetable oil
  • 0.5 cup sugar
  • 0.25 cup rice vinegar
  • 2 tablespoons ketchup
  • 2 tablespoons honey
  • 2 cloves (minced) garlic
  • 1 teaspoon sesame oil
  • 2 teaspoons cornstarch
  • 2 tablespoons cold water
  • 2 tablespoons sesame seeds
  • 2 stalks (chopped) scallions

Directions

Step 1

Cut the chicken breast into bite-sized pieces and place them in a bowl. Add 2 tablespoons of soy sauce and mix well to marinate. Set aside for 10 minutes.

Step 2

In a medium bowl, whisk together 1.5 cups of cornstarch, 1 cup of all-purpose flour, and 1 teaspoon of baking powder. Gradually mix in 1.25 cups of water, 1 beaten egg, and 1 tablespoon of soy sauce to create a batter with a pancake-like consistency.

Step 3

Heat 2 cups of vegetable oil in a large skillet or wok over medium-high heat.

Step 4

Dip the marinated chicken pieces into the batter, ensuring they are fully coated, and carefully drop them into the hot oil. Fry in batches for 3-4 minutes until golden brown and crispy. Remove chicken and place on a plate lined with paper towels.

Step 5

In a small saucepan, combine 0.5 cups of sugar, 0.25 cups of rice vinegar, 2 tablespoons of ketchup, 2 tablespoons of honey, 2 minced garlic cloves, and 1 teaspoon of sesame oil. Heat over medium flame, stirring until the sugar dissolves and the mixture is well combined.

Step 6

In a small bowl, mix 2 teaspoons of cornstarch with 2 tablespoons of cold water to form a slurry. Stir this into the sauce mixture and cook for an additional 2-3 minutes until the sauce thickens.

Step 7

Transfer the fried chicken pieces to a large bowl. Pour the prepared sesame sauce over the chicken, tossing gently to coat evenly.

Step 8

Sprinkle 2 tablespoons of sesame seeds and chopped scallions over the chicken as garnish.

Step 9

Serve immediately with steamed rice or stir-fried vegetables.
