  • 3 lbs Beef chuck roast
  • 1 tsp Salt
  • 1 tsp Black pepper

  • 1 Yellow onion, diced
  • 3 Carrots, peeled and chopped
  • 2 Celery stalks, chopped
  • 2 cups Beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tbsp Tomato paste
  • 2 Bay leaves
  • 2 sprigs Fresh thyme (optional)
  • 1 tbsp Cornstarch
  • 2 tbsp Water

Directions

Step 1

Season both sides of the beef chuck roast with salt, black pepper, paprika, and garlic powder.

Heat olive oil in a large skillet over medium-high heat. Sear the beef on all sides until browned, about 4-5 minutes per side. Transfer the beef to the crock pot.

Step 3

In the same skillet, sauté the diced onion for 2-3 minutes, until softened. Add the onions to the crock pot along with the chopped carrots and celery.
