Ingredients

  • 3 pieces ripe bananas
  • 0.5 cups unsalted butter
  • 1 cups granulated sugar
  • 0.5 cups brown sugar
  • 2 pieces eggs
  • 1 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons salt
  • 0.5 cups buttermilk
  • 1 cups chopped walnuts or pecans

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or two 8-inch round cake pans.

Step 2

In a medium bowl, mash the ripe bananas with a fork until smooth, then set aside.

Step 3

In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy, about 3-4 minutes.

Step 4

Add the eggs one at a time to the creamed mixture, beating well after each addition. Stir in the vanilla extract.

Step 5

In another bowl, sift together the all-purpose flour, baking powder, baking soda, and salt.

Step 6

Add the dry ingredients to the creamed mixture in three additions, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.

Step 7

Fold in the mashed bananas and chopped nuts gently with a spatula, being careful not to overmix.

Step 8

Pour the batter evenly into the prepared baking pan(s) and smooth the top with a spatula.

Step 9

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before serving or frosting if desired.
