Ingredients

  • 170 grams Unsalted butter, softened
  • 150 grams Brown sugar
  • 120 milliliters Molasses
  • 1 piece Large egg
  • 1 teaspoon Vanilla extract
  • 350 grams All-purpose flour
  • 1 teaspoon Baking soda
  • 1.5 teaspoons Ground cinnamon
  • 2 teaspoons Ground ginger
  • 0.5 teaspoon Ground cloves
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt

Directions

Step 1

In a large mixing bowl, beat the softened butter and brown sugar together using a hand mixer or stand mixer until the mixture is creamy and light in color, about 2-3 minutes.

Step 2

Add the molasses, egg, and vanilla extract to the butter and sugar mixture. Beat until fully combined.

Step 3

In a separate medium-sized bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground ginger, ground cloves, ground nutmeg, and salt.

Step 4

Gradually add the dry ingredients to the wet ingredients. Mix on low speed until a dough forms. The dough will be slightly sticky but firm.

Step 5

Divide the dough in half and shape each portion into a flat disc. Wrap the discs in plastic wrap and refrigerate for at least 2 hours, or up to overnight. This step will help the dough firm up and make it easier to roll out.

Step 6

Preheat the oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 7

Lightly flour a clean surface and roll out one disc of dough to about 6mm (1/4 inch) thickness. Use cookie cutters to create your desired shapes, then transfer the shapes to the prepared baking sheets, leaving about 2 cm (1 inch) between each cookie.

Step 8

Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are set but the centers appear slightly soft. The cookies will firm up as they cool.

Step 9

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Decorate the cooled cookies with royal icing, sprinkles, or other decorations of your choice, and enjoy!
