In a large mixing bowl, beat the softened butter and brown sugar together using a hand mixer or stand mixer until the mixture is creamy and light in color, about 2-3 minutes.
Add the molasses, egg, and vanilla extract to the butter and sugar mixture. Beat until fully combined.
In a separate medium-sized bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground ginger, ground cloves, ground nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients. Mix on low speed until a dough forms. The dough will be slightly sticky but firm.
Divide the dough in half and shape each portion into a flat disc. Wrap the discs in plastic wrap and refrigerate for at least 2 hours, or up to overnight. This step will help the dough firm up and make it easier to roll out.
