Season the pork cutlets with salt and black pepper on both sides.
Prepare three separate bowls: one with flour, one with one beaten egg, and one with panko breadcrumbs.
Coat each pork cutlet first in flour, then dip into the beaten egg, and finally coat with panko breadcrumbs, pressing gently to adhere.
Heat oil in a deep frying pan to 350°F (175°C). Carefully place the breaded cutlets into the hot oil and fry for 2-3 minutes per side, or until golden brown and fully cooked. Remove and drain on paper towels.
