Ingredients

  • 2 cups Graham cracker crumbs
  • 1 stick Unsalted butter, melted
  • 2 tablespoons Granulated sugar
  • 2 cups Whole milk
  • 1 cup Granulated sugar (for filling)
  • 0.25 cup Cornstarch
  • 4 large Egg yolks
  • 1 teaspoon Almond extract
  • 1 cup Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 0.25 cup Toasted almond slices

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated and clump together when pressed.

Step 3

Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie pan. Use the bottom of a glass or measuring cup to smooth it out evenly.

Step 4

Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool completely while you prepare the filling.

Step 5

In a medium saucepan, whisk together the milk, granulated sugar, and cornstarch over medium heat until smooth.

Step 6

In a separate bowl, beat the egg yolks. Gradually whisk in about 1/2 cup of the hot milk mixture to temper the yolks.

Step 7

Slowly pour the tempered egg yolks back into the saucepan, whisking constantly to prevent curdling.

Step 8

Continue cooking the mixture over medium heat, stirring constantly, until it thickens and bubbles. This should take about 5-7 minutes.

Step 9

Remove the pan from the heat and stir in the almond extract. Pour the custard into the prepared crust.

Step 10

Let the pie cool to room temperature, then refrigerate for at least 3 hours or until fully set.

Step 11

In a chilled mixing bowl, whip the heavy cream and powdered sugar together until soft peaks form.

Step 12

Spread or pipe the whipped cream over the top of the chilled pie.

Step 13

Garnish with toasted almond slices for decoration.

Step 14

Serve chilled and enjoy this ethereal dessert!
