Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 14.5 ounces canned diced tomatoes
  • 15 ounces canned corn, drained
  • 15 ounces canned black beans, rinsed and drained
  • 15 ounces canned kidney beans, rinsed and drained
  • 4 cups low-sodium beef broth
  • 1 packet taco seasoning mix
  • 1 packet ranch seasoning mix
  • 2 tablespoons olive oil
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh cilantro, chopped (optional for garnish)
  • 0.5 cups shredded cheddar cheese (optional for serving)
  • 0.5 cups sour cream (optional for serving)
  • 1 bag tortilla chips (optional for serving)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and sauté for an additional minute until fragrant.

Step 3

Add the ground beef to the pot and cook, breaking it up with a wooden spoon, until it is browned and cooked through. Drain any excess grease if necessary.

Step 4

Stir in the taco seasoning mix and ranch seasoning mix, ensuring the beef is evenly coated with the spices.

Step 5

Add the canned diced tomatoes, canned corn, black beans, kidney beans, and beef broth to the pot. Stir to combine all ingredients well.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 20 minutes to allow the flavors to meld.

Step 7

Season the soup with salt and black pepper to taste.

Step 8

Serve hot, garnished with fresh cilantro, shredded cheddar cheese, and a dollop of sour cream if desired. Pair with tortilla chips for a crunchy accompaniment.
