Ingredients

  • 0.5 cup Unsalted butter, softened
  • 0.5 cup Granulated sugar
  • 0.5 cup Brown sugar, packed
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 cup All-purpose flour
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1.5 cups Quick-cooking oats
  • 0.5 cup Crushed pineapple, well-drained
  • 0.75 cup Shredded sweetened coconut
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).

Step 3

Add the egg and vanilla extract to the creamed mixture and beat until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 6

Fold in the oats, crushed pineapple, shredded coconut, and chopped walnuts (if using). Be careful not to overmix.

Step 7

Scoop tablespoon-sized amounts of dough onto the prepared baking sheets, spacing about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. The centers may still look slightly soft.

Step 9

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 5 days, or freeze for longer storage.
