Ingredients

  • 3 pounds Beef chuck roast
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 3 medium Carrots, sliced
  • 2 medium Celery stalks, diced
  • 4 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Fresh rosemary, chopped
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Unsalted butter

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Season the beef chuck roast on all sides with salt, black pepper, garlic powder, and onion powder.

Step 3

In a large Dutch oven or oven-safe pot, heat olive oil over medium-high heat.

Step 4

Sear the roast for 3-4 minutes on each side until browned. Remove the roast and set it aside.

Step 5

In the same pot, add diced onion, carrots, and celery. Sauté for 5-7 minutes until softened.

Step 6

Sprinkle the flour over the vegetables and stir well to coat. Cook for 1-2 minutes to eliminate the raw flour taste.

Step 7

Gradually pour in the beef broth while stirring to ensure a smooth consistency.

Step 8

Add Worcestershire sauce, fresh thyme leaves, and chopped rosemary, stirring to combine.

Step 9

Return the seared beef roast to the pot, ensuring it is at least partially submerged in the liquid.

Step 10

Cover the pot with a lid and transfer it to the preheated oven. Cook for 2 1/2 to 3 hours, turning the roast halfway through, until the beef is tender and easily shreds with a fork.

Step 11

Once cooked, remove the roast from the pot and let it rest for 10 minutes. Shred or slice as desired.

Step 12

Return the pot to the stovetop over medium heat. Stir in the butter to enrich and thicken the gravy. Adjust seasoning with salt and pepper as needed.

Step 13

Serve the hot roast beef generously coated in gravy, along with the vegetables. Great with mashed potatoes or crusty bread on the side.
