Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy, about 2–3 minutes.
Add the egg, 2 teaspoons of vanilla extract, and 0.5 teaspoons of almond extract to the creamed mixture. Beat until well incorporated.
In a separate bowl, whisk together 2.5 cups of all-purpose flour, 1 teaspoon of baking powder, 0.25 teaspoons of baking soda, and 0.25 teaspoons of salt.
Gradually add the dry ingredients to the wet ingredients, alternating with 0.75 cups of sour cream. Begin and end with the dry ingredients. Mix until just combined; do not overmix.
Using a cookie scoop or a tablespoon, drop dough onto the prepared baking sheets, spacing them about 2 inches apart.

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
While the cookies are cooling, make the frosting. In a medium bowl, beat 0.5 cups of softened unsalted butter until creamy. Gradually add 3 cups of powdered sugar and 1 teaspoon of vanilla extract, mixing until smooth.
Add 2 tablespoons of milk to the frosting, one tablespoon at a time, until you reach your desired consistency. If using food coloring, add it now and mix well.
Once the cookies are completely cool, spread a thick layer of frosting on top of each one. Decorate with sprinkles, if desired.
